Winemaker’s Notes

Bright red veering on purple in colour. On the nose, the bouquet is persistent with winy fruity fragrant notes and hints of caramel and forest fruits. In the mouth, the wine is smooth, rounded with a touch of acidity that makes is both pleasant and intriguing to drink.  

 

 

Colli Bolognesi Barbera

Vinification

Soft pressing and de-stemming. Maceration in stainless steel tanks with regular plunging to extract colour and tannins. Partial fermentation in wooden casks at 25°C. Subsequent bottle-ageing for approximately 6 months.



Food Pairing

Traditional Emilian pasta dishes, filled pasta, pork loin and white meats. Also pairs perfectly with fish dishes.
