Winemaker’s Notes

Pale, straw yellow; dry, well-balanced, pleasantly crisp. Fine and persistent perlage.



Vinification

Soft pressing of whole or de-stemmed grapes at a controlled temperature. The grape must is then decanted and fermented at a controlled temperature in stainless steel tanks followed by a short fermentation on its lees. Secondary fermentation using the Charmat method for a period of approximately 6 months. Cellar ageing for 6 months.



Food Pairing

Appetizers, shellfish, starters, fish tartare.
