Desimo - Bianco Bologna 

 

Winemaker’s Notes

A true cru with grapes obtained from the winery’s selected 25-year old vineyard, surrounded by lush forests and the Bologna hills. The vineyard is located at 200 metres above sea level and lies on an average gradient facing south and consists of loose-textured soils with a loamy clay element and limestone and a slightly alkaline pH. Mineral bouquet, slightly aromatic, with fragrant citrus and peach notes. In the mouth, the wine is dry, with a distinctive character and pleasantly bright.

 

 

Colli Bolognesi Bianco Bologna

Vinification

Soft pressing of whole or de-stemmed grapes at a controlled temperature. The must from the first pressing is stored in stainless steel tanks and is then decanted and separated from its sediment. Carefully selected varietal yeasts are added and fermentation takes place at 12°C followed by ageing ‘sur lies’ for 8-9 months. The wine is then stabilized, filtered, bottled and finally aged in the cellar for a minimum of 3 months.



Food Pairing

Perfect served as an aperitif, and pairs well with fish and strong aromatic dishes.
