Fine and persistent perlage
Vinification
Soft pressing of whole or de-stemmed grapes at a controlled temperature. The must is then decanted and is then fermented at a low temperature. Short fermentation on its lees. Secondary fermentation using the Charmat method for approximately 3 months.
